I agree with several of the above. I've stolen some for my list:

I've made vegtable stock a couple times, and it's really wonderful. I was worried that it would be too much in a dish that already had celery and onions in it, but it just made it more flavorful. It's a big help when our vegan friend is here.

If you checked out the comments to Sassy's post, you'll see there are lots of repeats. It's a reminder that cooking doesn't have to be terribly complicated. The basics will get you through most of the time. What interests me even more are the items that I don't need, but other people do. I love cucumbers and broccoli, but they're not an essential.
Oh, I forgot Dijon mustard. I have to amend my list.
I tried to put this together without looking too closely at the other lists:

1. flour
2. oil
3. butter
4. milk
5. buttermilk
6. onions
7. garlic
8. stock (of some sort -- homemade, canned, whatever)
9. eggs
10. spices (I know -- this is a cheat; if you're going to push me, pepper)
11. salt
12. crackers
13. wine (dry vermouth will do for cooking)
14. vegetable not already listed (so it can rot in the fridge), or a frozen one (probably peas or corn), or a canned one
15. baking powder/soda (cheating again: usually have both, but can make do with just 1)
16. a canned tomato product
17. tea
18. sugar
19. chocolate (or cocoa, or Nestle's Quik, or *something* chocolaty)
20. an item to be named later :)
I thought about: An acid or lemons, but I can let some wine go sour and make vinegar; Canned beans, but beans could be the vegetable; Another starch like pasta or rice (or potatoes), but I guess I could make some pasta from the staples if I really had to; Yeast, but I can make bread as sourdough; Some kind of meat.

I wasn't sure if these were supposed to be pantry staples or not, but I assume not totally. If so, I guess I'd lose the milk products and want maybe nuts, or preserved milk (cheese), or preserved meat (Spam). ;)
In addition to yours I'd add coffee, a block of dark chocolate, tomato paste, almonds, a chunk of parmesan, anchovies, and canned tuna.

Hi Dane. I left baking ingredients off my list, but I've gotten to the point where I panic if I don't have flour, baking powder and brown sugar. You never know when the pound cake bug will hit. So they are also essentials for me, not to mention good vanilla.

Hi Geology Byotch. I don't know why it cut off my last few - a couple of good cheeses, and dill pickles (I like a good sandwich). And I see I left vanilla off. That's not good. For me it's the cookie bug.
